SACHER HALKO & SACHER LOG

Summer seems to be just around the corner & It is Time to Celebrate Mothers this Weekend!

Cant`t think of a better way to treat the MOMS than my Chocolate Rich variation from SACHER cake


- SACHER LOG





INGREDIENTS
(v, gl)

Tip: Prepare this to one day before & place in to a fridge to set to maximize the flavors


BASE


400ml Oat Flour

1 dl Coconut Flour

1 dl Raw Cacao Powder

3 tsp Baking Powder

1 tsp Ksantaani/ xanthan

1 tsp Cardamom

&

50g Dark Chocolate 70%
1/2 dl Coconut Oil

&

Water

MOISTEN WITH LEMON JUICE & WATER


Method: Mix all the dry ingredients. Melt the chocolate on low heat with coconut oil. Add with dry ingredients.
Place the mixture on a baking paper.

Bake in an oven 180 C / ~30 min


FILLED WITH HOME MADE ORANGE & APRICOT JAM

COCONUT CREAM

Ingredients

Orange peel
1 Whole oranges
1/2 Lemon
Coconut Sugar
Water

&

300g Dried Apricot
0,5 tbsp Vanilla Sugar 
Water

200 ml Coconut Cream

Extra: 2 Passion Fruits

Method: Wash one orange properly. Peel it and cut the peels into thin slices & pieces.

Peel the oranges and one lemon. 
Mix in a blender.

Add the orange peels & blended fruits into a kettle with coconut sugar and water.
Slightly let it boil, then leave it simmer for ~15 minutes.

&

Add apricots into a kettle with vanilla sugar. Pour water until it covers the apricots.

Boil the mixture and let the apricots simmer until they are soft.

Let the apricots cool down & Blend till smooth.
(Add a little bit water if needed)

&

Finalize:
When the base and the jams are cooled down you can put this beautiful Sacher Log Together.

First, Whisk 200 ml of Coconut Cream.

Start by spreading orange jam on top of the base. Then add half of the coconut cream. Then add another layer of apricot jam. Add the rest of the coconut cream. Carefully roll the sacher log together by using the baking paper.

Let it set in a fridge for around 15 minutes.


Then finalize with dark chocolate & decoration.






COVERED WITH MELTED DARK CHOCOLATE 

DECORATED WITH ORANGE ROSES & FRESH STRAWBERRIES

200g Dark Chocolate
1 tbsp Coconut Oil
Orange juice

&

Orange Peel
Fresh Strawberries




This Recipe is a variation my Women`s Day Sacher Cake 
I used half of the ingredients of the Sacher Cake except the amount of Chocolate to maximize the Rich Flavor!
