Recently I`ve been enjoying different vegetable dips & pastes.

They are perfect on top of the bread if you want to replace butter or cheese, use them as a dip sauce with vegetables & side dish option.

There are so many options where you can utilize vegetables, in this recipe I`m going to introduce you a simple recipe made from only one vegetable - Eggplant







INGREDIENTS



2 Eggplants


1 dl Sesame Seeds / 2 tbsp Tahini


4 Cloves Of Garlic


1/2 Lemon Juice


Grated Lemon Chest


Sea Salt





METHOD


Wash & Cut the ends off of the eggplants. Cut the eggplants in eight parts & place in an oven

180 C / 45 min

Let the eggplants cool down & remove the peels with fingers.

Place all the ingredients into a blender & blend until smooth.


LET THE FLAVORS SET IN A FRIDGE ~1 H






Add some flavor by using different herbs; Basil or parsley

&

get some kick into the flavor by adding some fresh chili
