Oh, Hello Spring!

I just got so inspired by the flavor & color of CARROTS, so I want to bring you another wonderful recipe made of them!


CARROT BLINIS WITH CARROT SORBET


I can promise you, This Combination is irresistible!

The Super Smooth & Fresh Sorbet tastes heavenly good with warm blinis, with a hint of passion fruit!

INGREDIENTS


BLINI

2 Grated Carrots

500ml Oat Flakes

~5 dl Water



Grate the carrots with the smallest end of the grater. Use a blender to turn the oat flakes into flour.
Mix the carrots & flours with water.

Use a small blini pan
&
Cook the blinis both sides ~5 min / high temperature














SORBET



2 Grated Carrots

2 Passion Fruits

1/2 Lemon

1 Tbsp Honey

Again, Use the smallest end of a grater to grate the carrots. Peel the lemon.
Add all the ingredients into a blender.
Mix High Speed until smooth.

Pour the mixture in four small glasses or cups.


Place in the freezer & let them freeze properly.












TOPPINGS & DECORATION

Avocado

Fresh Lemon Balm

1 Passion Fruit

Mixed Seeds


 Take the sorbet out of the fridge ~30 min before serving.
Pile up the blinis on a plate. Add one avocado & sprinkle it with black pepper, sea salt & lemon juice.
Squeeze one passion fruit on the top of the sorbet.

Sprinkle with mixed seed & add some fresh lemon balm.


LET
the sorbet melt on the top of the warm blinis.
