VEGAN GINGERBREAD MUDCAKE

VEGAANINEN PIPARIMUTAKAKKU LASIPURKISSA

IN A GLASS JAR






INGREDIENTS


Chickpea Water "Aquafaba"

 2 tbsp Apple Cider Vinegar

 2 tsp Vanilla Sugar

A chunk of 100% Cacao Mass

1 tbsp Coconut Oil

*

6 Dates

*

1,5 dl Coconut Flakes

2 tbsp Raw Cacao Powder

1 tsp Baking Powder

Ceylon Cinnamon

*

Fresh Ginger

Orange Peel


METHOD


Use the Water of one Chickpea carton PERFECT EGG SUBSTITUTE

With an electric mixer whisk the Chickpea Water, Apple Cider Vinegar & Vanilla sugar till the texture becomes fluffy
( As when using eggs)

Boil water and place it in a kettle 
Add the Raw Cacao Mass in a bowl with the Coconut Oil and place on top of the kettle

Let them melt

Soften the dates in boiled water

*

Mix all the dry Ingredients together

*

Grate the fresh Ginger & Orange Peel





GLUTEN & EGG & DAIRY FREE




Combine The Dry Ingredients With the mixed Chickpea water, Apple Cider Vinegar & Vanilla Sugar

GENTLY  use a spoon for that purpose DO NOT MIX IT TOO HARD

Then Add melted Chocolate, Coconut Oil & Grated Ginger and Orange Peels

Smash the dates with a fork & Add with other ingredients

Fill the 2/3 of A Glass Jar

*

Place in an oven

170 C / ~15 minutes

*

TIP:

After 10 minutes use a wooden stick to try whether the cake is cooked enough

I prefer it is not fully cooked in the middle*

*

LET IT COOL DOWN & PLACE IN A FREEZER ~30-60 MINUTES BEFORE SERVING
